Café Latte with Small Batch Handmade Hemp Milk

The best homemade latte you'll ever have. Period.
  • For The Milk

  • About 18 cashews (1/4 cup)
  • 3 tbsp hemp seeds
  • 12-15 oz water
  • 2 dates
  • ½ tbsp coconut butter
  • For The Espresso

  • 14-18g finely ground coffee (enough for a double shot)
  1. To Make The Milk

  2. Add cashews, dates, hemp seeds, coconut butter, and water to Ninja or other blender.
  3. Blend on high for 30 seconds.
  4. Pour blended mixture through nut bag into a large bowl.
  5. Pour milk from the bowl into a mason jar.
  6. Store in fridge.
  7. Save remaining nut mixture from the nut bag for smoothies later.
  8. To Make The Latte

  9. Grind your coffee using the Breville directly into the portafilter that comes with your espresso machine (my settings are usually set for 2 shots, 18 seconds, and 13 grind size
  10. Tamp coffee with espresso tamp. Use medium pressure.
  11. Insert portafilter into espresso machine and pull a double shot of espresso from your espresso machine (2 oz).
  12. Pour into 12 oz mason jar.
  13. Add 3-4 oz of hemp/cashew milk.
  14. Add ice to top it off.
Soaking all the ingredients will make it easier to strain the milk, but it's not completely necessary if you're in a pinch.

Chances are this latte will be stronger than what you're used to. The ratio of milk to espresso is almost equal, which is not normally how most places make latte. But if you like coffee, you will LOVE this.

When making it iced, be sure to add the espresso, milk, and ice - in that order. If you add the ice first the ice melts and waters it down. Even better is to let your espresso cool for 10-20 minutes, but who wants to wait that long for coffee? Not me!
