Creamy Delicata Soup

  • 2 cups Delicata Squash
  • 2 red bell peppers
  • 3-4 medium cloves garlic- roasted or raw ( I roasted mine)
  • Ginger- fresh, medium-small size piece peeled
  • ¼ cup Nutritional Yeast
  • 3 Tablespoons Hemp seeds
  • 2 Tablespoons Tahini
  • 2½ cups veggie stock (I used low sodium version)
  • Coconut oil-for roasting
  1. Preheat oven to 400°F
  2. Cut and clean out squash, removing all guts guts and seeds.
  3. Drizzle with coconut oil and place on baking dish.
  4. Place in oven for 25-35 minutes. You will know when to take it out because it will be tender all the way through and slightly golden on the edges.
  5. Remove from oven and let cool. When squash is cool enough to pick up, remove the outer shell from the soft part of the squash and place into blender, or food processor.
  6. Cut and clean out peppers, removing all seeds and spines.
  7. Drizzle with coconut oil and place on baking dish.
  8. Place in oven for 20-25 minutes.
  9. Add roasted peppers, garlic, ginger, Nutritional yeast, hemp seeds, tahini and veggie stock into high powered blender or food processor. Blend on high for 2-3 minutes. Stop to scrape the sides if necessary while blending.
  10. Serve!
