This is my beautiful & crazy family, aren’t they the cutest?! I spend a lot of my time in the kitchen cooking and creating tasty food for them, they serve as my inspiration for Cuckoo Kitch’n. I’ve always had an affinity for cooking (and eating) and it’s evolved over the years to include a little bit of everything. I absolutely love hosting family and friends — there is nothing quite like the bonding that happens over a good meal. And I love when I can serve healthy plant-based food that satisfies even the pickiest of eaters!
I do most of my cooking while juggling multiple demands from my children.
All of my recipes are plant-based, taste-tested to perfection and made of mostly whole/healthy ingredients. It is extremely important to me to know what goes into the food I am eating and feeding my family.
Artificial coloring gives me anxiety, and I obsessively check the produce numbers to see how our food was grown. We are huge animal lovers and decided in our early twenties that we were no longer going to consume any animal products (aka went vegan).
Living a cruelty-free life feels the best for us, but we understand that not everyone shares our views— we just hope that everyone will share a meal or two with us and see how delicious a plant-based meal can be!
When I’m not at home or in the kitchen you can find me and the fam at the beach, on a hike with our furry bffs Jasmine and Asher, and all her canine cousins aka the #RepkoPups, on a photo adventure, or on my yoga mat sweating it out and trying to perfect my headstand.
I hope you enjoy my cooking and would love it if you share any recipes or ideas that you want me to tackle – I love new challenges!
